Back to School - Back to Baking

Every year as school time comes, I get back into the kitchen with my baking at full blast. I bake bread for school lunches, muffins for breakfasts and dinners for the entire week on Sunday. This is a great time saver and money saver.
School Bread for Kids
Here is the recipe for school bread for kids. I use a one rise method for school bread because kids are less likely to care about the texture as they are about what is on the sandwich.
2 1/4 cups unbleached white flour
2 1/4 cups wheat flour
1/2 cup oatmeal - uncooked
2 packets of yeast
Warm water
Large bowl
Baking spray
2 Loaf pans
(Keep flour on hand for kneading)
Throw all of the ingredients into the bowl. Add the water water a little at a time until the flour starts to ball up and appear like large balls. Begin to knead the bread in the bowl. Knead for two minutes, adding flour as needed to keep the bread from sticking to your hands. '
Flour the counter and drop the dough out of the bowl. Knead for 5 more minutes, adding flour along the way.
Spray the loaf pans and drop 1/2 of the dough into each. Allow the bread to rise in a warm place until double or triple in size. Bake the bread in a 400 degree oven for 25 to 30 minutes.
*This recipe can be doubled or tripled as needed.
TIP - TIP - TIP
In order to make the bread shiny on the top, beat a few eggs in a bowl and paint the bread after the rise. This will give the loaf a professional look.
